Recipe Red Lentil Curry (4 hungry mouths)
2 garlic cloves
1 shallot
1-2 chili peppers (as spicy as you can take on)
4 teaspoons sesame oil
500 g young potatoes (cut in small squares for quicker cooking)
250 g red lentils
700ml vegetable stock
2 teaspoons curcuma
coriander
3-4 teaspoons curry
Heat up garlic, shallot and chili in the sesame oil until everything is nicely glazed.
Add curcuma and coriander and mix everything up.
Let the potatoes enter the aroma heaven, stir for 1 or 2 minutes and then douse with vegetable stock. Cook everything for another 8-10 minutes before the red lentils join the fun. Add as much curry as your palate can take and wait until the mix is done.
Enjoy alone or with pita bread (if you do not mind any additional carbohydrates).
