Courgette Muffins
It is an easy-peasy recipe – mix it all up until you have a smooth dough and fill 12 muffin pans, bake them for about 35 minutes at 175°C.
60g margarine
100g sugar
150g flour
100g oatmeals
2 eggs
½ teaspoon cinnamon
1 teaspoon baking soda
2 big spoons almond milk
For the icing: mix the icing sugar with some lemon juice and some warm water – only as much so that you have a pasty paste – and frost your muffins (after they have cooled off a little bit).
